Who doesn’t love a muffin!
You may have to make twice as many and keep half for yourself!

You will need:
½ cup melted butter
2 beaten eggs
½ cup milk
¾ cup soured cream
1½ cup plain flour
½ cup golden caster sugar
2 teaspoon baking powder
1 teaspoon bicarbonate of soda
3 small apples (peeled and diced)
¼ cup pecans or pistachios
½ cup soft toffee or fudge
½ teaspoon vanilla essence
½ teaspoon cinnamon
Preheat oven. (200f 180c, gas mark 6). Line a 12 hole muffin tray with paper cases.
Mix together all the other ingredients and then stir in the liquid.
Divide up in to the paper cases. Bake for 25 minutes until golden.
