Super refreshing light dessert. Easy to make and yet soooo impressive!

You will need:
2 whisked egg whites
750g cooking apples (peeled, cored and diced)
1 lemon (grate the rind and squeeze the juice)
80g caster sugar
Simmer the apples with three quarters of the sugar, grated lemon rind and juice for 10 minutes until the mixture is dry.
Whisk the egg whites with the remaining sugar. Fold in the whisked cream.
Liquidise the apples and fold in the cream mixture. Spoon in to your dishes and cool in the fridge for two hours.
