Apple Cake

This gorgeously moist cake makes the whole house smell delightful.

You will need:
6 medium baking apples, cored, peeled and sliced
2 large beaten eggs
1/2 cup plain flour
1/3 cup sugar
1/3 cup milk
2 tablespoons vegetable oil
1 tablespoon baking powder
1/8 teaspoon salt
1/2 teaspoon vanilla essence
zest of 1 lemon

Topping:
1/3 cup sugar
1 large beaten egg
3 tablespoons melted unsalted butter
1 tablespoon lemon juice
zest of 1 lemon

Preheat oven. (425f, 220c, gas mark 6). Butter a 9 inch cake tin. Mix flour, sugar, baking powder and salt.
Mix in vanilla, eggs, oil, milk and lemon zest and stir in apple slices.
Spoon into the cake tin and bake for 25 to 35 minutes until slightly firm and golden.
Topping: Mix sugar, egg, melted butter, lemon zest and juice.
When the cake is done, pour over the topping mixture and return it to the oven and bake for a further 10 minutes until the cake is firm and golden brown.
Allow to cool for ten minutes before removing from the tin.
