It can be time consuming to pick the petals off, but the results are super yummy. Try to gather your dandelions from pollution free areas as early in the year as possible. (Later flowers do get a little more bitter!)

You will need:
4 cups sugar
4 cups distilled water
4 cups dandelion petals
2 slices lemon
2 slices orange
vanilla pod (1/4)
Put the dandelion petals, lemon slices, orange slices and the vanilla pod quarter into boiling water. Simmer for 30 minutes. Remove from heat and steep for 6 hours.
Strain the liquid through a muslin cloth. Place in a saucepan and bring to a low boil.
Gradually add sugar until dissolved. Lower the heat and let simmer. (This may take up to 4 hours).
Pour the dandelion honey into sterilised jars.
You can decorate the jars with labels, ribbons and a gingham jar cover.
